Green Tea Milk Hearth Bread

This is an ultimate combination of green tea, sugared bean and white chocolate. Rugged hearth bread folded with bean confectionaries looks pretty.

Ingredients: 2 servings

○Bread (strong) flour
180 g (235 g if Japanese domestic grown flour)
○Plain flour
15 g
○Milk (cooled down after lukewarmed)
10 g (6 g)

○ Matcha
9 g
3 g
Dried yeast
1 teaspoon
Unsalted butter
15 g
◎Bean confectionaries such as kanoko
◎White chocolate
30 g
Bread (strong) flour
As needed


1. Put the ○ ingredients into a bread maker pan. Put dried yeast in the yeast compartment. Wait until the first proof. After 5-minute kneading, add butter.
2. After the first proof, take out the dough and divide the dough into two and shape into two balls. Cover with a moist tea towel over the dough to prevent drying and let it sit for 15 minutes.
3. Punch out the air and roll out the dough into rectangles. Sprinkle with half of the ◎ and fold in the dough twice from both sides.
4. Roll the dough and shape into oblong balls. Seal the edges well. Cover the dough with a moist tea towel and leave to prove in a warm place.
5. Preheat the oven to 390°F/200°C. After proving, sprinkle flour and make 5 slits on each dough.
6. Bake in the 355°F/180°C oven for about 20 minutes and it is done.
