Kabocha Squash Dip

Kabocha Squash Dip

Kabocha squash is great during autumn. Go ahead and try it with other dishes.

Ingredients: one meal's worth

Kabocha squash
100 g
Plain yogurt
30~50 g
Cream cheese
18 g
3 prunes
Grated cheese
1 tablespoon
1 tablespoon
Salt and pepper
as needed

1. Take the kabocha and remove the seeds and pith. Cut them into bite-sized pieces.
2. Cook the kabocha! (You can just as easily microwave it)
3. Cut the prunes into quarters. Bring the cream cheese to room temperature.
4. Transfer it to a bowl and mash it while it's still hot. I like my dip chunky so I don't really mash it up too much.
5. Add the other ingredients and mix! Season with salt and black pepper to taste.
6. I put it on a baguette and put drizzled honey on top.

Story Behind this Recipe

I took a dip that is a hit in our home and mixed yogurt into it.
