Kabocha Squash "Sweet Cubes" with Azuki Sauce

Doesn't it taste more kabocha-ish than regular kabocha?
These cubes taste really rich and sweet. It's easy and even healthier because it's made with kanten.

Ingredients: 4 servings

Kabocha squash
Kanten powder
5 g
a pinch
2 cups (400 ml)
Maple syrup
4 tablespoons
Boiled azuki beans
5 tablespoons
Soy milk
4 tablespoons
Maple syrup
1 tablespoon


1. Peel the kabocha squash and simmer with water, maple syrup, salt, and powdered kanten until softened.
2. Blend in a blender. Pour into a container and chill in the fridge.
3. Combine the boiled adzuki beans with soy milk and maple syrup. Grind in a mortar until your preferred thickness. Serve with the kabocha squash cubes.
