Chinese Stir-Fried Shrimp, Squid, and Broccoli

The key to the flavor is in the preparation. It's easy to cook!
The shrimp and squid are so plump, it's irresistible!

Ingredients: 2 to 3 servings

Shrimp (Black Tiger)
8 (peeled and deveined)
Frozen Squid
1 (remove hard skin)
Broccoli
1 (chop into small batches, boil in salted water)
Sake
1 to 2 tablespoons
Katakuriko
1 tablespoon
△Salt
A pinch
△Egg white
1/2 an egg's worth
△Katakuriko
1 heaping tablespoon
☆Water
120 ml
☆Chicken soup stock, soy sauce
2/3 teaspoons each
☆Sake
1 tablespoon
☆Sugar
1 1/2 teaspoon
☆Salt
A pinch
Sesame oil (for stir frying)
1 heaping tablespoon
Sesame oil (for finishing)
About 2 teaspoons
Katakuriko slurry (water:potato starch = 2:1)
About 1 tablespoon

Steps

1. Make diagonal cuts on one side of the squid, leaving 5 mm spaces in between. Turn it around 90° and repeat the process. Chop into bite-sizes.
2. Simmer for 1 minute and add katakuriko dissolved in water to thicken. Drizzle sesame oil to finish. When everything is mixed well, dish it up.
3. Return to the bowl. Add all △ ingredients in order and rub in. Combine ☆ ingredients.
4. Heat a frying pan and add sesame oil. Align the squid and shrimp, then stir-fry both sides. Add ☆ ingredients from step 3. Also add boiled broccoli.
5. Simmer for 1 minute and add katakuriko dissolved in water to thicken. Drizzle sesame oil to finish. When everything is mixed well, dish it up.
