Fresh Kale Salad

Fresh kale is full of vitamins, minerals, and calcium, so I came up with this delicious salad.

Ingredients: 1 serving

Kale (finely chop just the leaves)
about 3 handfuls
☆Lemon juice
about 1 tablespoon
about 2 pinches
☆Olive oil
about 1 teaspoon
★Lemon juice
about 1 tablespoon
★Orange marmalade
about 1 tablespoon
★Black pepper
a rather large amount
★Olive oil
about 1 teaspoon
Sunflower seeds
about 1 tablespoon


1. Remove the leaves from the hard stems of the stem, finely chop, and put in a bowl.
2. Add the ☆ ingredients to Step 1 and use your hands to mix together well. Let sit for about 3 minutes and let the kale soften.
3. Use a whisk to mix together the ★ ingredients. Lightly toast the sunflower seeds in a frying pan, then finely chop.
4. Mix Steps 2 and 3 together to finish.

Story Behind this Recipe

Kale's in season, so I wanted to make food with kale. I looked for some recipes and saw many delicious-looking kale salads, but I only had about half of the necessary ingredients! It still turned out delicious, though!
