Ramen-style Glass Noodle Soup for Dieters

If you want to eat ramen while you're on a diet, don't restrict yourself! This ramen-style noodle soup is filling and satisfying.

Ingredients: 2 servings

Cellophane noodles
200 g
1/2 clove
★Chicken soup stock granules
1 1/2 tablespoon
★Soy sauce
1 1/2 tablespoons
1 teaspoon
a pinch
Boiled egg (Recipe ID: 1172027)
3 slices
Vegetables you like
As needed
A small amount


1. Immerse the cellophane noodles in hot water for about 3 minutes to soften. Cut into half. It is no problem if the inside is still hard at this stage!
2. Core the cabbage and julienne.
3. Heat 600 ml of water, grated garlic and ingredients marked ★ in a pan.
4. Bring to boil, and add the shredded cabbage and the glass noodles. Boil until they are soft enough to eat.
5. Serve in a bowl, and top with ham, boiled egg (cut in half) and vegetables! Sprinkle pepper if you like.
6. Use lots of vegetables for the topping and make the dish more filling and nutritious! I topped my dish with bitter melon (goya) rubbed with salt, chives (nira) and goji berries.

Story Behind this Recipe

Since it's so hot outside, I often having cravings for cold pints of beer. Beer can lead to over-eating, though. This is definitely something that will still go great with your drinks, even without the extra calories.
