NY Cheesecake

It's super soft.
This is a cheesecake that will melt in your mouth.

Ingredients: 18 cm circular mold

Cookie Batter
100 g
50 g
Cheesecake Batter
Cream cheese
200 g
Sour cream
100 g
Granulated sugar
70 g
Lemon juice
1 tablespoon
75 g
Heavy cream
75 g


1. Cover the bottom of the mold with aluminum foil. Crush the biscuits in a plastic bag with rolling pin. Melt the butter.
2. Mix the melted butter into the crushed biscuits and spread out onto the mold. Preheat the oven to 150℃.
3. In a bowl, add the cream cheese, sour cream, granulated sugar, and lemon juice. Blend until smooth over a hot-water bath.
4. Remove the bowl from the hot-water bath, add eggs, yogurt, and heavy cream in this order, mixing well with each addition. Don't let any air in by mixing too much.
5. Pour batter into the mold. If you see any air bubbles on the surface, pop with a toothpick.
6. Place the mold on a baking sheet filled with hot water and bake for 40 minutes at 150℃. Always bake over hot water.
7. Once baked, wait until it cools down. Cover with plastic wrap and chill well in the refrigerator.
8. Cut into your preferred sizes and it's done...
9. It's super soft, and good for kids too.
10. I used an 18 cm circular mold for this one. I baked with some cut strawberries inside.
