Standard Chicken Curry ★

Not difficult at all... Let's make the roux. ♪

Ingredients: serves 4

Chicken thigh with bones

20 g
Garlic
a pinch (large)
Vegetable oil
3 tablespoons
Butter
30 g
Strong bread flour
25 g
Curry powder
2 tablespoons
Chili powder
1 teaspoon
Coriander seed
1 teaspoon
Tomato paste
40 g
White wine
1 cup
Salt
a small amount
Water
4 cups (800 ml)

Steps

1. This is what the ingredients look like. My reason for using bone chicken thighs is because I wanted to make it like the manga "Giatrus." ♪
2. Cut the chicken, and add about 1% of its weight in salt. Set aside.
3. Let it sit for at least 10 minutes to render the fat! When cooking it'll also render, so wipe excess and cook. ♪
4. Cook until golden brown, as shown in the picture! Next we'll take on the roux!
5. Saute the thinly-cut onions, grated ginger, and garlic together in oil. Add the butter in at least 2 batches.
6. It's not at all difficult. Cook until browned, as shown!
7. Now add strong flour! Cook until the flour smell is gone. This is where you'll get your bitter flavor balance!
8. Add curry powder and cook and the roux is complete!
9. Add meat, making sure the oil has drained. Heat the chicken to remove excess water!
10. Add white wine, and cook until the alcohol has burned off. This completes the whole flavor. Add water and boil for 40 minutes.
11. I recommend cheese as a topping!
12. How about jalapeno pickles. ♪
13. Scarf it down like a man!!
