Pan-Fried Bitter Melon

Have some bitter melon that's pan-fried and crispy!
Its bitterness will be totally eliminated after it's been marinated well.
This dish makes such a wonderful appetizer.


Bitter melon
★ Soy sauce, sake
1 tablespoon each
★ Garlic and ginger
10 g (1 cm if tubed)
1 tablespoon plus
2 tablespoons


1. Halve the bitter melon. Remove its seeds and fiber, and cut into 5 mm slices. You don't need to remove any bitterness by soaking it in salt water.
2. Put the bitter melon and the ★ ingredients into a plastic bag and let the flavors settle in.
3. Transfer the bitter melon into a new plastic bag, and coat with katakuriko. Let some air into the bag and shake it around. The katakuriko will coat the melon nicely.
4. Heat some oil in a frying pan and pan-fry the bitter melon. Flip them over once they're nicely browned. They're done when both sides become crisp.
