Basil and Tomato Garlic Rice

This is an Asian-style garlic rice dish with the rich sweetness of fried cherry tomatoes.

Ingredients: 2-3 servings

Cherry tomatoes

Bacon
2 slices
Fresh basil
15 leaves
Hot cooked rice
450 g
Red chili pepper (sliced)
1 whole pepper
Garlic (sliced)
1 clove
Fish sauce
1 tablespoon
Lemon juice
from 1/4 of a lemon
Salt and pepper
as needed

Steps

1. Slice the cherry tomatoes into halves or quarters, depending on their size. Slice the bacon into 1 cm widths.
2. Put 1 tablespoon of vegetable oil and the garlic in a frying pan. Tilt the frying pan diagonally and fry the garlic over low heat until browned.
3. Remove the garlic. Add the chilli, bacon, rice, tomatoes and basil to the frying pan in that order and fry. Then, season with fish sauce and salt and pepper.
4. Sprinkle with lemon juice to finish. Transfer to a serving plate and top with the fried garlic.

I had lots of tomatoes and basil in my garden, so I used them in this garlic rice.
