Remove the fat from the chicken. It's easier with kitchen scissors.
Cut into large bite-sized pieces, and sprinkle with salt and pepper.
Heat the olive oil in a frying pan, and sauté the garlic and onion. When the onion becomes translucent, remove from the pan.
Add more olive oil into the same pan, and brown both sides of the chicken. Wipe off the excess oil with paper towels.
Add the onion, canned tomatoes, white wine, and consommé, cover with a lid, and simmer over medium heat. Adjust the flavour with salt and pepper. Since the cheese will be added later, don't put too much salt.
Simmer until the liquid has mostly evaporated. In the meat time, cook the penne pasta.
Add the cooked penne pasta, and mix. Spread the cheese all over, cover with the lid, and cook over low heat until it's melted, then you're done. Serve on a plate, and sprinkle with parsley on top.

I sometimes cooked chicken in tomato sauce. When I added cheese and penne pasta, it was delicious. Since then, this has been one of my family's favorite dishes.
When you are cooking the penne pasta... bring it to a boil, and stir for 1 minute. Turn off the heat, cover with a lid, and leave it for the amount of time indicated on the package. Penne pasta with tomato sauce is tasty, so please give it a try!
