Maman's Salade de Carottes Rapées (Carrot Salad)

Maman's Salade de Carottes Rapées (Carrot Salad)

A standard French home cooking recipe -- carottes rapées. Basically, it's a carrot coleslaw. Eat a whole carrot rich in carotin just like that. Try it in sandwiches.

Ingredients: 2 to 3 servings

1 large
about 1/3 teaspoon - depends on the size of the carrot.
★ Olive oil
1 tablespoon
★ Honey
1 teaspoon - adjust to taste
★ Wine vinegar (or lemon juice or rice vinegar)
1 teaspoon - adjust to taste
★ Grated onion
1 tablespoon (optional)
★ Black pepper
to your liking
Sour cream (optional)
1 tablespoon
Walnuts or almonds (coarsely chopped)
A generous amount (about 1 handful)

1. Shred the carrot, sprinkle with salt and leave for 5 to 10 minutes. When the color turns very bright, massage with your hands and then squeeze out well to remove any extra moisture.
2. Add the ★ ingredients to a bowl and mix to make the dressing. Add the carrot to the bowl, and mix well. Add sour cream to taste.
3. Add the walnuts plus raisins, parsley etc. and mix together to finish. This tastes better if you rest it for a while so that the flavors can blend together.
4. It's good without the grated onion and sour cream, too. Here I added some salted and massaged celery too. You can keep this in the refrigerator for 4 days.

Story Behind this Recipe

I love carottes rapées sandwiches. The key to the mild flavor is the generous amount of walnuts.
