1. Cut the potatoes roughly and soak in water. Mince the onion and carrot.
2. Put the potatoes in a large pot, fill with water to submerge the potatoes, and heat. When you cover the pot, it might boil over so be careful.
3. Heat a frying pan and cook the minced meat. After its colour starts to change, add the onion and carrot and continue to fry.
4. After the vegetables are cooked through, season with the ☆ ingredients and remove from heat. Let cool.
5. When the potatoes have cooked, discard the boiling water. (Slide the lid slightly and drain the water.) Be careful not to burn yourself!
6. Mash the potatoes with a wooden spatula and heat over medium heat to evaporate the excess moisture. After the moisture has evaporated, stir in the ★ ingredients.
7. Transfer Step 5 into a bowl and combine with Step 3. Transfer half of the mixture into another bowl and mix in the curry powder.
8. Shape the mixture and coat with flour, egg and panko (in this order) and deep-fry in 180°C oil until golden crisp.

Story Behind this Recipe

I like homemade croquettes, but it takes time and effort to make. Since you put so much effort, prepare 2 kinds.
