Add the carrots and onions, and cook over medium heat until the onions are translucent.
Add all the vegetables except the sweet potatoes, and cook until soft.
Add the water, tomato juice and all ingredients marked ＊. Bring to a boil, then reduce the heat to low and cook for about 30 minutes.
Add any vegetables that become soft quickly (such as sweet potatoes) at the end. It's ready when the sweet potatoes are cooked through.
Add Parmesan cheese and/or parsley if you like.
Story Behind this Recipe
I had tomato juice that I wanted to use up, so I tried making soup with it. This is really good for you since it has tons of vegetables in it. Cooking the vegetables slowly really releases their flavor.
Feel free to use any vegetables you like – go ahead and add anything lurking at the bottom of your veg compartment.
I didn't list any meat in the recipe, but this also tastes great with bacon or chicken added.
