Cut the cream cheese into 1 cm cubes. Combine the cheese, tomatoes and chopped parsley in a bowl with the seasoning ingredients.
Toss together gently with a spoon.
Plate and serve.

Story Behind this Recipe
I didn't have any mozzarella cheese so I used cream cheese instead.
Mix gently so the cream cheese doesn't fall apart. Serve as soon as you've added the seasoning ingredients. (If you let it stand for too long, the salt will draw out the moisture from the vegetables and make them watery.)
