Oil-free Banana Kiwi Cake

I used kiwi instead of apple in this healthy banana cake. The tartness is even more delicious than expected.

Ingredients: 18 cm round cake pan

Ripened bananas
2 large
Ripened kiwis
2 (net 170 g)
90 g
Pancake mix
230 g
Lemon juice (optional)
a small amount


1. Lightly sprinkle the bananas with lemon juice, add 70 g of sugar, and use an electric mixer to mix it well. Let sit for 15 minutes.
2. Peel the two kiwis and cut into 1 cm cubes. Put into a heatproof container.
3. Sprinkle with 20 g of sugar, heat in the microwave for 2 minutes, and mix with chopsticks. Preheat the oven to 160°C.
4. Add the kiwi sauce from Step 3 to the banana bowl from Step 1 and mix well.
5. Next, add an egg and mix well.
6. Add the pancake mix and mix together with a spatula. Line the cake pan with parchment paper and pour the batter in.
7. Bake in an oven preheated to 160°C for about 50 minutes. Remove from the oven and let sit for 10 minutes.

Story Behind this Recipe

I had some kiwis in my refrigerator, so I replaced the apples in banana apple bread and made this unexpectedly delicious cake. All my friends loved this more than my usual banana apple bread.
