Hot and Sour Soup with Tomato, Okra, and Bean Thread Noodles

This spicy and sour soup boosts your energy in summer. It's fluffy from the egg, with smooth bean thread noodles, refreshing from the tomatoes, and nutritious from the okra.

Ingredients: 2 servings

Bean thread noodles
30 g
Sesame oil
1 tablespoon
a small amount
400 ml
☆Chicken soup stock granules
2 teaspoons
☆Soy sauce
1 teaspoon
1/3 teaspoon
1/2 tablespoon
1/2 tablespoon
a little more than 1 tablespoon
to taste


1. Cut the tomato into 2-3 cm bite sized pieces. Sprinkle the okra with a little salt and roll on a cutting board. Rinse and slice into 5 mm.
2. Parboil the bean thread noodles in plenty of boiling water. Drain and cut into easy to eat pieces.
3. Beat the egg.
4. Heat a pan with sesame oil and stir fry the tomato briefly. (Until the tomato is coated with oil.)
5. Add all the ☆ingredients to the pan, bring to a boil and add the okra and parboiled bean thread noodles. Simmer for 2~3 minutes, then add vinegar and stir.
6. Dissolve the ♦ katakuriko with ♦ water, add to the pan and stir.
7. Pour in the beaten eggs, add a few drops of ra-yu spicy chili sesame oil and it's done.

Story Behind this Recipe

I cooked Cameroonian dishes before and I made a tomato soup with okra, and it was very delicious. So I tried hot and sour soup using tomato and okra with vinegar added to enhance the flavor. It's great for summer! This soup boosts your energy.
