Caprese Salad with Pesto alla Genovese

We always have some pesto alla genovese with pine nuts at home. I serve the pesto next to a caprese salad with tomato and mozzarella cheese.

Ingredients: 2 servings

Tomatoes

Mozzarella cheese

Basil
6 leaves
Balsamic vinegar/lemon juice
1 tablespoon
Pepper
a small amount
Salt, if needed

Steps

1. Wash the tomatoes, pat dry and slice vertically. Wash the basil and pat dry. Slice the mozzarella cheese and place it between tomato slices with the basil leaves.
2. Drizzle with balsamic vinegar. Put some pesto on the side (or pour over the salad). Serve with bread as an appetizer or light evening meal.
3. I added avocado slices and tomato sauce. I omitted the balsamic vinegar and use lemon juice instead. This was what I had for dinner one night.

Story Behind this Recipe

I had homemade pesto alla genovese in the refrigerator. Since I bought mozzarella bufala, I made caprese salad.
