Mixed Spices

I enjoy combining various spices to make my original curry powder.

Ingredients: about 30 ml

Powder
◆ Cumin seeds
2 teaspoons
◆ Coriander
2 teaspoons
◆ Turmeric
2 teaspoons
◆ Red chili pepper
1 1/3 teaspoon
◆ Cardamon
1/4 teaspoon
◆ Cinnamon
1/4 teaspoon
◆ Allspice
1/4 teaspoon
◆ Garlic
1 teaspoon
◆ Ginger
1 teaspoon

Steps

1. Measure out all of the spices and mix.
2. Dry roast the spices in a frying-pan over low heat for about 5 minutes. *Keep stirring with a wooden spatula or shake the pan consistently.
3. Transfer spices to a bowl or shallow container. I kept shaking the bowl to let the spices cool.
4. Put the spices in a jar and store in a cool and dark place. Let the spices rest for a while to let the flavors and aromas settle in, and it's done.
