Simple Ginger-flavored Fried Eggplant and Minced Meat

Ginger-flavored fried eggplant and minced meat. Great with rice. Pack this in your bento as it's also great cold!

Ingredients: 4 servings

4 (small Japanese type)
Minced meat
200 g
1 to 2 tablespoons
◎Grated ginger
1 piece
◎ Sake
4 tablespoons
◎ Mirin
4 tablespoons
◎ Soy sauce
2 tablespoons
◎ Sugar
1/2 to 1 tablespoon


1. Chop off the stem from the eggplant and slice to 5 mm diagonals. Heat oil in a frying pan and stir fry the minced meat.
2. When the minced meat from Step 1 is cooked, put the eggplants, and let the eggplants absorb the oil whilst stir frying.
3. Put all ◎ ingredients into Step 2 in order and stir fry until softened. Serve on a plate and sprinkle white sesame to your liking. It's done.
