Well Chilled Marinated Tomatoes

The tomatoes just melt in your mouth. Please chill them well. Even if you don't like the "green" smell of tomatoes, I think you'll enjoy these.


500 g
Onions, finely chopped
1 to 2 tablespoons
Zucchini, eggplant, etc.
To taste
For the marinade:
* Vinegar
3 tablespoons
* Olive oil
5 tablespoons
* Sugar (or honey)
about 1 tablespoon
* Salt
1/2 teaspoon plus
* Peppercorns
5 to 6
* Bay leaf
* Soy sauce
To taste


1. Combine the marinade ingredients.
2. Remove the cores from the tomatoes. Put them briefly in boiling water, and peel.
3. Chop up the tomatoes and add to the marinade. Add the chopped onion and marinate for 3 hours to overnight.
4. Variation: Mix the marinated tomatoes with zucchini on a plate. Pour over the marinade.
5. If you marinate the tomatoes for 3 to 4 hours or overnight, a lot of juice will come out of the tomatoes, and they will become sweet and flavorful. You can marinate it overnight and serve it for breakfast.
6. Variation: Use cherry tomatoes, and grate the onion rather than finely chopping it.
7. Variation: Combine with grilled or fried eggplant.
