Draniki Potato Pancakes

Draniki Potato Pancakes

I heard somewhere that this was originally Belarusian food, but apparently Russian people love potato pancakes too! Have these for breakfast or for snacks. Serve with sour cream.

Ingredients: 5 pancakes

All-purpose flour
1 teaspoon
1 teaspoon
Sour cream
as you like (if desired)

1. Peel the potatoes and slice with a slicer.
2. Rinse the potato from Step 1 and lightly pat it dry. Place it in a bowl and mix with the white flour, beaten egg, and salt.
3. In a skillet, heat a generous amount of oil. Pour on a ladle full of potato mixture and pan-fry it over medium heat. Once it is browned, turn over and press it from the top to flatten.
4. Cook both sides until golden brown, serve it with some sour cream and you're done. I like eating it with ketchup, but my husband says that is unconventional.
