Pan-Fried Zucchini with Cheese and Panko

The rich flavour of cheese goes well with zucchini.

Ingredients: 3 ~ 4 servings

1 (large size)
● Panko
200 ml
●Parmesan cheese
4 tablespoons
a small amount
Olive oil
3 tablespoons
Coarsely ground black pepper
to taste


1. Cut the zucchini into 7-8 mm slices, and sprinkle both sides with a small amount of salt. Let it sit for 4-5 minutes. Put the ● ingredients into a bag, and shake to mix.
2. Put the zucchini into the bag from Step 1. Coat both sides of each slice with the mixture. *Refer to Helpful Hints.
3. Heat olive oil in a pan over medium heat, and pan-fry both sides of the zucchini until golden brown. (When you flip them, if you need more oil, add 1 tablespoon.)
4. Transfer to a serving plate, sprinkle with black pepper if you like, and serve.

Story Behind this Recipe

Zucchini tastes great when you pan-fry it in plenty of olive oil.
I created this recipe because I thought coating the zucchini with cheese and panko would be delicious.
