These are the ingredients. Chop the cucumbers roughly.
Mix the marinade ingredients.
Put the cucumber pieces and marinade in the refrigerator.
It can be eaten after half a day, but marinate for at least a day if you can. If you stir it up from the bottom occasionally, it will keep for 4 to 5 days.
I also recommend carrots and daikon radish with this marinade.
Story Behind this Recipe
My mother used to make this every summer. It's a family favorite.
I simply cut up the cucumber roughly, but my mother like to make thin slices into it so it would resemble an accordion. The marinade can be reused as a salad dressing or sauce if it hasn't gotten too watery.
