Mix the ingredients marked ★ to make a thick, creamy batter.
Place some aluminium cups in the frying pan, and pour the mixture in so they are 70% full. Top with diced uncooked sweet potato cubes.
Add a small amount of water to the frying pan and bring to the boil over strong heat.
Put the lid on, and steam over low heat for 10-12 minutes to finish If the sweet potato is still a little floury, it might be better to let them steam a little longer.

My mother used to make me steamed sweet potato bread when I was a child. I made the recipe easier by using pancake mix.
It has a mild sweetness, but if you would like it to be sweeter, mix some sugar, brown sugar or honey into the batter. Using a small amount of water is the only way I can think of to prevent the boiling water from getting into the cups....
