Fresh Zucchini & Ginger

Fresh Zucchini & Ginger

This dish uses slightly seasoned fresh zucchini. It also tastes great if umeboshi plums are used instead of ginger.

Ingredients: 3-4 servings

Zucchini
1
Salt
1/2 teaspoon
Ginger
1 small piece
Mentsuyu (3x concentrate)
1 teaspoon
Water
2 tablespoons

Steps

1. Slice the zucchini with a slicer and gently rub with salt. Lightly squeeze the water out and transfer to a dish.
2. Dilute the mentsuyu with water and pour over the zucchini. Add the grated ginger on top to finish.
