Udon Noodles with Grated Daikon and Beef

The tender beef is concentrated with flavors and combined with grated daikon (Japanese radish). It'll provide you with the energy you need for hot summer days.

Ingredients: 3 servings

Udon noodles
3 servings' worth
Thinly sliced beef
◆Soy sauce
2 tablespoons
2 tablespoons
1 tablespoon
1/2 tablespoon
Grated daikon radish
as much as desired
Mentsuyu and water
one serving about 100ml-120ml
Your choice of toppings such as cucumber, leek, shiso leaves, grated ginger, etc...


1. Dilute the mentsuyu to the strength listed for "warm broth" and chill.
2. In a pot, heat the ingredients marked ◆. Add the beef and break it up with chopsticks while cooking.
3. Once the beef is cooked, turn off the heat and leave as is to soak up the flavors (20-30 minutes).
4. Boil the udon according to the directions on the package. Cool in cold water and drain.
5. Fill the individual serving bowls with the udon, then top with the beef, grated daikon, and other toppings. Pour the chilled dipping sauce over the top and enjoy.

I get plenty of request for cold noodles in the summertime.
Meat and grated daikon are satisfying for an evening meal, so I came up with this recipe to serve them with udon noodles.
