Sweet and Salty King Oyster Mushroom Sushi

Why not try making various kinds of sushi with king oyster mushrooms? How about making pressed sushi, ball shaped sushi or hand-rolled sushi? Get creative!


King oyster mushrooms
1/2 a stick
Yellow paprika
1/2 tablespoon
1/2 tablespoon
Soy sauce
about 1/2 tablespoon
Sushi rice
About 2 bowls
Toasted white sesame seeds
1 tablespoon
Shiso leaves
a small amount
Umeboshi (chopped)
as needed
The tips of green onions


1. Slice the king oyster mushroom vertically and julienne the carrot. Cut the paprika as well.
2. Fry the king oyster mushrooms in oil until they turn brown and take them out. Fry the carrot and paprika and then put the king oyster mushrooms back in.
3. Add sake, sugar, soy sauce and dashi stock granules for seasoning.
4. Add some cut shiso leaves and sesame seeds to the sushi rice. Mix.
5. If you want to make a pressed sushi, layer the rice on a sheet of plastic wrap, shape it into a long , and top with carrots, paprika and king oyster mushrooms. Then wrap the whole thing with a sushi mat.
6. Cut it while it is still wrapped in the plastic wrap. Garnish it with chopped salted plum and the top part of the leek.
7. If you want to make ball shaped sushi, place the king oyster mushrooms on the plastic wrap, then put the carrot and paprika on. Then layer on the rice and wrap it tightly.
8. If you are making sushi hand rolls, top with anything you'd like. You can even wrap it in lettuce.

This is our home recipe. I wanted to make an easy to make and fun recipe using king oyster mushrooms. Kids will love this too. For adults, this would be good as a drinking snack. It's also good for parties.
