Made with Leftovers - Cheese, Shiso Leaves and Carrot Toast

On 24 June, 2010, the day before I was due to move houses, I was cleaning out my fridge and combined the leftovers I had. This is a surprisingly good combination packed with nutrients and is amazingly tasty!!

Ingredients

Sliced bread
1 slice
Carrot
3 cm (Enough to be covered by the cheese)
Shiso leaves
4 leaves
Mayonnaise
Enough to spread on the bread
Cheese
1 slice plus

Steps

1. Julienne the shiso leaves and carrot.
2. Spread mayonnaise on the bread.
3. Top with the carrot and shiso leaves.
4. Cover the carrot and shiso with cheese, and toast. The carrot will steam-bake if it's fully covered with cheese.
5. The result is delicious toast with gooey shiso cheese, sweet carrot and the subtle flavour of mayonnaise.

Story Behind this Recipe

I was cleaning out my fridge the day before I moved houses, and used up all the leftovers by making toast. The result was amazingly good.
