Juice the orange and add the egg yolk so that it totals to 175 g.
Wash the skin of the orange with coarse salt, zest half of the orange and add to step 1. This will be your liquid ingredients for the bread.
Make the dough with a bread machine. Add the butter after 5-7 minutes of mixing time and add the zested orange peel when the 'mix in' beep sounds. Allow the dough to rise.
Punch, divide and let rest for 15 minutes, covering with a damp cloth to prevent from drying out.
Reshape the balls and place them into the mold. Allow to rise (2nd rising) .
Bake in an electric oven at 200℃ for 18-20 minutes and it's done.
Fluffy with rich with orange aroma!
Story Behind this Recipe
I originally had a similar bread at Kobeya Restaurant which I loved and decided to recreate it. The Kobeya version is somewhat greasier and richer than my version, but in my opinion, as for the orange color and taste, it's close enough. I have experimented a number of times and came up with this recipe.
The dough will rise well, so you might need to use a larger mold.
