This recipe uses no eggs or butter and only has three ingredients! These crunchy cookies are not only simple, they are easy on your body. I used whole wheat flour and didn't even sift it to make it easier!
Preheat your oven to 180℃. Combine the ingredients together and mix well. Form the dough into balls with the palms of your hands, and place on an oven tray lined with baking paper.
Bake for 10-15 minutes. Adjust the heat as necessary while keeping an eye on them.
For Christmas, I used icing and chocolate to draw on the cookies.
Here, I made little balls out of the dough. Once they cooled, I sifted powdered sugar on them to make them look like snowballs.
I also formed them into rilakkuma for my kid.
Story Behind this Recipe
I wanted to make a simple recipe that is healthy for children, and easy to make with them too.
If the cookies are tough to shape, you can add just a little bit of oil to the dough. Since you'll be using whole wheat flour, the dough might feel just a little bit crumbly, but it shouldn't be a problem. If you don't want to use cane sugar, you can use light brown sugar or even regular sugar. If you're on a strict macrobiotic regimen, I'd suggest using beet sugar instead of sugar that's cane-based, since cane sugars are more aggressively yin.
