Plum Jam Cookies (crispy and low-cal)

These cookies are made with umeshu plum jam. They are made with only a minimum amount of oil, and the sweetness is simply from the jam, so they are rather healthy.

Ingredients: For 1 baking tray

50 g
Jam made of umeshu plums (Recipe ID: 825289)
100 g
Cake flour
200 g


1. Combine the jam with the margarine, and mix using a spatula.
2. Add the cake flour, and mix the margarine and the flour with your hands until it's crumbly.
3. Bring the dough together, and shape it into a 2-cm thick block. Cut it in lengthwise in half, then cut into 2-mm thick slices.
4. Place on a baking tray lined with parchment paper. Bake for 25 minutes in a 150℃ preheated oven (adjust the time and temperature to your oven).
5. Once they're baked, let cool on a rack.

Story Behind this Recipe

My son had a day off today in lieu of parent's day on Saturday. I wanted to give him a freshly baked snack, and so I made this with ingredients on hand. It turned out so nicely that I posted the recipe here.
