Peel the potatoes. Slice 1 cm thick, rinse in water, and dry well.
Put the potato slices in a plastic bag so that they don't overlap. Microwave for 4 minutes at 600w.
Transfer to a bowl while still hot, and mash.
Finely chop the bacon, wrap in paper towels and microwave for 15 to 20 seconds at 600w to cook and remove the fat. Finely chop the black olives.
Finely chop the parsley and onion.
Put everything in a bowl and mix together.
I formed the mixture into balls in the top photo, but you can also just serve it on a plate.

I love this combination of ingredients, so I make pasta and bread with them too. It's the potato version of my recipe "Olive bread for adults", Recipe ID: 931684.
I used new sweet onion this time. I didn't put them in a bowl of water, but if the harsh taste of the onion bothers you put the slices in water, drain and pat dry, then chop up. I didn't use much mayonnaise for this potato salad is not that moist. Add some milk or cream to make it moister.
