Fava Bean and Sakura Shrimp Croquettes

Enjoy the creamy flouriness of fava beans with the crunchy crispy texture of sakura shrimp (small dried shrimp) in these croquettes.

Fava beans (with their skins on)
250 g
1 large
Sakura shrimp - tiny dried shrimp
10 g
a small amount
2 tablespoons
As needed
Beaten egg
As needed

Oil for deep frying

1. Boil the potato and the fava beans.
2. Dry out the drained potatoes in the pan, and mash them up as as you would with potatoes for potato salad.
3. Peel the skins off the fava beans. Add them with the sakura shrimp, pepper, and mayonnaise to the mashed potatoes and mix well.
4. Form into balls. Leave until they have cooled down completely. Coat with flour, beaten egg and panko, and deep fry.
