Versatile Shiitake Mushroom Miso (Meat Miso Substitute)

Uses shiitake mushrooms instead of ground meat for an item vegetarians can keep in stock. There are plenty of ways to enjoy it, from eating with cold tofu or simmered daikon radish, to eating on top of white rice. A healthy meat-tofu alternative.

Ingredients: 2-3 servings

Shiitake mushrooms
2 cloves
1 thumb's worth
Vegetable oil
1 tablespoon
Sesame oil
1 teaspoon
1 tablespoon
☆Soy sauce
1 tablespoon
1 tablespoon
1 tablespoon
1 teaspoon
☆Doubanjiang (optional)
1/2 teaspoon


1. Mince the shiitake, garlic, and ginger.
2. Mix together all of the ☆ ingredients.
3. Heat some vegetable and sesame oil in a frying pan, and cook the Step 1 ingredients.
4. Add the combined Step 2 ingredients to the frying pan. Once the alcohol has cooked off, it's complete.
5. I made Shiitake Mushroom Miso Fried Udon. I used half of the powdered sauce included with the fried udon and mixed in the shiitake mushroom miso. A very simple dish.

Story Behind this Recipe

I love meat, and I'm fond of meat-based miso. However to get along with my husband who is vegetarian I've increased my knowledge about shiitake, and I casually tried my hand at making this. It came out pretty well, so now I have a stock item I can use.
