Udon Restaurant Style Curry Udon Noodles With Lots of Dashi Stock

This curry udon can be made with just one cube of curry roux! The soup is rich with dashi in this udon restaurant style dish.

Ingredients: 2 servings

Udon noodles
2 packs
Beef (or pork)
about 100 g
Onion
1/2
Water
450 ml
Mentsuyu (diluted to dipping sauce strength)
150 ml
Curry roux (block)
2 to 3 pieces
Bonito-based dashi stock granules
1 tablespoon
○ Katakuriko
1 tablespoon
○ Water
1 tablespoon

Steps

1. Cut the beef into easy-to-eat pieces. Slice the onion.
2. Put the water and mentsuyu sauce in a pan and bring to a boil, then put in the beef and onion.
3. Skim off any scum. When the beef and onion are cooked, add the curry blocks and dashi granules.
4. When the curry blocks have dissolved, mix together the ingredients marked ○ (katakuriko slurry) and add to the pan to thicken the soup.
5. Boil the udon noodles and drain well. Put in a serving bowl, pour the sauce over it and it's done. Sprinkle some chopped green onion to taste.
6. 2 servings for my wife and myself, finished!!
