Fava Bean Paste (or Edamame)

Fava Bean Paste (or Edamame)

I made bean paste using fava beans.
Brings out the flavor of the beans in a nice green color.
Use in breads and Japanese sweets.

Fava beans or edamame (boiled, de-skinned)
about 120 g
30 ~ 50 g
a pinch

1. Remove the skins from the fava beans and boil in boiling salt water (salt not listed) for 4-5 minutes.
2. Once they've boiled, remove the thin skin layer, and either strain or mash with a fork. It's a bit difficult, but give it your all.
3. Add Step 2 to a small pot. Add the sugar and heat. Evaporate the moisture, but cook to your desired stiffness. Add the salt mid-way.
4. And it's complete.
5. I made flat bean paste bread. It was really good.
6. This is also delicious made from edamame.

Story Behind this Recipe
