Eggplant & Bell Pepper Japanese Marinade

You can make this in 10 minutes.
How about trying a refreshing marinade during the hot summer days?

Ingredients: 2-3 servings

Eggplant
2 small
Red bell pepper
1/2
Yellow bell pepper
1/2
◆Soy sauce
1 tablespoon
◆Olive oil
1 tablespoon
◆Lemon juice
2 teaspoons
◆Japanese mustard (in a tube)
1/2 teaspoon

Steps

1. Chop the peppers and eggplant into bite-sized pieces.
2. Heat some olive oil (not listed) in a frying pan and pan-fry both sides of the eggplant slices.
3. Once the eggplant has been cooked, remove from the frying pan!
4. Add more oil to the same frying pan and cook the peppers for 5-6 minutes.
5. Add the cooked eggplant and peppers, as well as the ◆ ingredients to a bowl and mix.
6. Before eating, chill in the refrigerator for the flavors to meld.
