Teriyaki-style Quick-Braised Chicken and Shiitake Mushrooms with Vinegar

I added vinegar to this sweet and savoury flavoured dish for a lighter taste. This goes really well with rice. You'll be able to finish it up in 4 minutes!

Ingredients: 4 servings

Chicken thigh
1 piece
Fresh shiitake mushrooms

Vegetable oil
1 teaspoon
For the sauce:
☆ Water
1/4 cup
☆ Sake
2 tablespoons
☆ Sugar
2 tablespoons
☆ Soy sauce
2 tablespoons
☆ Vinegar
2 tablespoons
☆ Mirin
1 tablespoon

Steps

1. Cut the chicken thigh meat into bite-sized pieces. Discard the stems of the shiitake mushrooms and cut in half.
2. Heat the vegetable oil in a pan over a high heat and fry the chicken with the skin side down. After both sides are nicely browned add the shiitake mushrooms and fry.
3. Add the ☆ sauce ingredients and shake the pan gently. Simmer over a medium heat for about 3 minutes and serve.

Story Behind this Recipe

I got ahold of very meaty thick shiitake mushrooms and decided to cook them with chicken thighs. Their combination is great, isn't it? As I wanted to eat this dish with rice I had this dish sweet and savoury flavoured and I also added vinegar to make it lighter.
