The key to cold shabu-shabu, bang bang chicken and similar dishes is the sesame sauce. I'll show you how to make that sauce easily. It's cheaper than buying it too.


Chicken tenders or breast meat + sake
300 g
★ Toasted white sesame seeds
30~50 g
★ Vinegar + sugar
2 tablespoons each
★ Soy sauce
3 tablespoons
★ Sesame oil
2 tablespoons
★ The juice from grated ginger
2 teaspoons
★ Grated garlic
A small amount (optional)
★ Mayonnaise
2 tablespoons
★ Doubanjiang or red chili peppers
To taste
★ Water or dashi stock
50 ml


1. Make all the ingredients ready.
2. Put about 30 ml of sake in a pan with the chicken plus water to cover, and poach the chicken. I made bang bang chicken this time, but you can use this sauce with salad, cold Chinese style dishes, or many other things. Please try it out.
3. How to make the sauce: Put the ★ ingredients in a food processor and mix. If you are using sesame paste, you can just mix it by hand.
4. The sauce is done.
5. Shred the cooked chicken or slice it diagonally. Serve with plenty of the sesame sauce! The sauce is great for hiyashi chuuka (cold Chinese style noodles) too!
