Soy Bean Salad

A family favorite!
I wanted to make a simple soybean salad.

Ingredients: 4 servings

Soy beans cooked in water
1 bag (200 g)
Frozen mixed vegetables
1/2 cup (100 ml)
To taste
Salt and pepper
a small amount
Coarsely ground black pepper
To taste
Crabsticks, fish sausage, canned tuna etc.


1. Rinse the soybeans briefly and drain in a colander or sieve. (With some types of cooked soybeans there's no need for rinsing.)
2. Defrost the mixed vegetables in the microwave (1 to 2 minutes at 500w - watch and adjust.)
3. Cut the cucumber into 1 cm dice. Sprinkle with salt and leave for a while, then squeeze out the excess moisture.
4. Put all of the above in a bowl, and flavor with mayonnaise, salt, pepper and coarsely ground black pepper.
5. With potato chips: I crushed some potato chips and sprinkled them on top.
6. An easy reuse: If you have leftover salad... Mix with egg and turn into a Spanish style tortilla! Just mix and fry up in a pan.
