Quick Curry-Breaded Horse Mackerel

This is a good recipe to make a big batch for using in bento; just divide into single portions, wrap with aluminum foil, and freeze. They're also good for a quick dinner.

Ingredients: 2 to 4 servings

Aji (Horse mackerel; filleted)
150 g
Salt and pepper
a small amount of each
Curry powder
1-2 teaspoons
If using store-bought curry roux, crumble it finely. You can also use powder curry + soup stock granules.
Olive oil
1 teaspoon
a handful
Oil for frying
as needed


1. Season both sides of the fish with salt and pepper. Coat with curry powder.
2. Drizzle with olive oil, making sure to cover all parts, then press the panko on both sides.
3. In a heated frying pan, place the fish and fry both sides until cooked thoroughly. These are handy to store fried and then frozen.

I came up with this recipe for bento. Since breading and frying fish in the morning can be a hassle, I thought of a way to make it easy and delicious.
