Imitation Crab Salad Summer Rolls

Lightly flavored summer rolls using imitation crab sticks.

Ingredients: 4 rolls

Imitation crab sticks
2 leaves
Cellophane noodles
about 20 g
Spring roll wrappers (rice paper wrappers)
Dressing of your choice

1. Julienne the cucumber. Soak the harusame noodles in boiling water for 5 minutes, and drain well. Shred the lettuce leaves to the same length as the crabsticks.
2. I bought the rice paper wrappers at the Chinese section of the supermarket.
3. Put lukewarm water into a large bowl, and soak the wrappers.
4. They become soft in 1-2 minutes.
5. Put lettuce, cucumber, harusame noodles and 2 crabsticks on a wrapper.
6. Fold the near end of the wrapper over the fillings.
7. Fold in both sides of the wrapper.
8. Roll up as shown.
9. Cut each roll in half, and they're done!
10. Serve with a dressing of your choice.
11. You can also wrap shrimp, salmon, ham, steamed chicken, or whatever you like.
