Bring the ★ ingredients to a boil in a pot and add the chicken. Bring to a boil and cook for 1 minute. Turn off the heat and cover with a lid. Let cool completely.
Mix the Chinese sauce ingredients together. There should be enough to use for the accompanying vegetables too. It's very yummy!
Remove the skin from the chicken and slice thinly. Store in the refrigerator immersed in the poaching liquid. Just take out when you need it.
If you eat this with vegetables it's very well balanced. The poaching liquid can be used for soup so there's no waste.

I tried a lot of recipes that use cheap chicken breasts and create very tender results, and think this recipe is the best of all.
Make sure that the chicken is covered with the chicken broth when it's being poached. Choose the right size pot and use water Just enough to cover the chicken. If you use too much water, the umami-filled juice of the chicken will escape into the water. Cool the chicken in the poaching liquid so that the meat can re-absorb the umami.
