Sweet Onion Marinade

Sweet and fresh sweet onions -- by marinating them, you can make them easier to preserve.

Ingredients: An easy-to-make-amount

Sweet onions (regular ones are also fine)
*Rice vinegar
4 tablespoons
* Maple syrup (can be substituted with sugar)
1-2 tablespoons to taste
*Natural salt
1 teaspoon
1/2 teaspoon
*Curry powder
1/2 teaspoon
*Black pepper
a small amount
Dried parsley or other herb
to taste


1. Slice the onions thinly along the fibers.
2. Put the onions in a large bowl and add the * flavoring ingredients and mix well.
3. Leave to rest in the refrigerator to blend the flavors. Add the parsley to taste, then you're done. You can serve it after about 10 minutes, but it's even more delicious if left overnight.
4. Use sweet onions as they, but if using regular onions, I recommend soaking them in water briefly before marinating.
