Put the onions in a large bowl and add the ＊ flavoring ingredients and mix well.
Leave to rest in the refrigerator to blend the flavors. Add the parsley to taste, then you're done. You can serve it after about 10 minutes, but it's even more delicious if left overnight.
Use sweet onions as they, but if using regular onions, I recommend soaking them in water briefly before marinating.

Sweet onions are now in season. I was given quite a bit of them, so I'm trying them out in various recipes.
Once you've added the flavoring ingredients, thoroughly work in the ingredients with your hands. I do this by using a plastic bag as a glove and mixing them by hand. If you don't have any cumin, use extra curry powder instead. Adjust the sweetness to your liking. I prefer a tart flavor, so I use 1 tablespoon.
