Banana Pound Cake made with Rice Flour

Just add the ingredients in order, mix well, and bake. This is a springy, moist, low-allergen rice flour banana pound cake.

Ingredients: 1 pound cake pan

Banana
2 medium (about 160 g)
Sugar
80 g
Canola oil
60 g
Water
70 ml
B
Rice flour
130 g
Cornstarch
30 g
Baking powder
1/2 tablespoon

Steps

1. Mash the banana with a fork. Preheat the oven to 180°C.
2. Add the A ingredients to a bowl in order from the top. Use a whisk to combine.
3. Add the B ingredients into the bowl. Mix together well and then pour in the cake pan. Bake for 30-40 minutes.

Since the cake I had made using leftover banana came out really tasty, I made a rice flour version.
