Cut the bacon into 1 cm pieces. Slice the onion and garlic. De-seed the chili pepper and cut up with kitchen scissors.
Put olive oil and garlic in a pan and stir fry over medium heat until the garlic is fragrant. Add the onion and continue stir frying (for a fair amount of time; about 15 minutes).
Add chili pepper and bacon and stir fry for about 5 minutes. Take care not to let it burn. Add the sake and let the liquid evaporate from the pan.
Add the canned tomatoes and stir-fry while crushing the tomatoes. Cook over medium heat for about 5 minutes, and 7-8 minutes over low heat. Calculate when to start cooking the pasta in the meantime.
Dissolve the miso in milk and add to the pan. Add pepper, and taste. If it lacks salt, adjust by adding pasta boiling water or salt.
Cook the pasta for 1 minute less than indicated on the package, take out of the boiling water and mix with the sauce in the pan to finish. Sprinkle with parsley to taste.

A pasta dish that adults and children can enjoy. This is a big hit in our house. Even though it's just a small amount, the miso and milk have a big impact!!
Take care not to let the garlic or onion burn. Don't cook for too long after adding the milk and miso. If the sauce gets too concentrated, adjust by adding some of the pasta cooking water. Cook the pasta for 1 minute less than indicated on the package.
