Egg and Spinach Soy Milk au Gratin

No need for white sauce. This gratin is delicious made with soy milk.

Ingredients: 2 servings

Spinach
1/2 bunch
Potatoes

Eggs

●Soy milk
200 ml
●Soup stock cube granules
1 teaspoon
●Salt and pepper
a small amount
Pizza cheese
about 40 g
Parmesan cheese
to taste
Butter
10 g
Salt and pepper
a small amount

Steps

1. Boil the eggs and slice into rounds. Boil the spinach and slice into 4-5 cm pieces. Cut the potatoes into 5 mm thick slices.
2. Heat the sliced potatoes and ingredients marked ● in a saucepan. Bring to the boil, but make sure the soy milk doesn't boil over. Then turn the heat to medium low, and simmer until the potatoes soften.
3. Melt the butter in a frying pan and sauté the spinach. Season with salt and pepper.
4. Put the potato and soy milk from Step 2 in a heatproof dish, then top with the spinach and boiled egg slices.
5. Sprinkle on some pizza cheese and Parmesan cheese. Bake in the toaster oven for 7-10 minutes until golden.

My neighbour gave me some spinach, so I looked up some spinach recipes. I referred to other recipes for hints to make this.
