Orange Simmered Celeriac - Turkish Homemade Cooking

The unique flavor of the celery is counteracted by the orange in this very tender flavored stew.
The soft and flaky texture of the celeriac (knob celery) is irresistible.

Ingredients: 2-3 servings

Celeriac (Knob Celery)
1 (300-350 g)
Onion
1
Potato
1
Carrot
1
Green peas
40 g
Sugar
1 teaspoon
Salt
1/2 teaspoon
★Orange (squeezed juice)
1/2 orange (40-50 ml)
★Lemon (squeezed juice)
1/2 lemon (10-20 ml)
★Olive oil
50 ml
★Water
slightly under 750 ml
Dill (optional)
to taste
Olive oil (for stir frying)
1 tablespoon

Steps

1. Mince the stalks and stems of the celery. Cut the root into 3-4 cm cubes. ※The larger the pieces are, the softer and flakier they become.
2. Thinly slice the onion and cook in the frying pan. Once tender, add the 1.5cm cubes of potato and carrot.
3. Once cooked, add the green peas, sugar, and salt for flavor.
4. Place the celeriac in a pot. Add the stir-fried vegetables on top.
5. Top with the minced celery leaves and stalks.
6. Add the ★ ingredients, cover with a lid, and simmer for 15-20 minutes.
7. Once the vegetables have softened, arrange on a dish and garnish with dill.
8. It's done.

Story Behind this Recipe

This is a standard recipe in my home during the winter.
I make other dishes using only the celeriac stems and stalks, but this recipe uses the whole thing. I change the amount of celery depending on my mood.
