Potato and Shimeji Mushroom Sauté with Mayonnaise

The main ingredients are potato, shimeji mushrooms, and mayonnaise. You can make a delicious drinking appetizer (or side dish) with only these ingredients. You could also use shiitake mushrooms or aonori powdered seaweed. It's a dish that's great to have for breakfast, too!

Ingredients: 1-2 servings

Shimeji mushrooms
1/2 packet
a small amount
Black pepper
a pinch
4 heaping teaspoons
Olive oil or vegetable oil
2 teaspoons
Parsley (optional)
as needed


1. Peel the potato, chop roughly, and soak in water. Drain but keep them slightly wet, cover with plastic wrap and microwave for 2 1/2-3 minutes.
2. Heat oil in a pan, add the potato from Step 1, and stir-fry until crispy. Crumble in the shimeji mushrooms with the stems removed.
3. Stir-fry over high heat, pour in the mixture of salt, pepper, and mayonnaise then turn down the heat. When the potato pieces are coated with sauce, turn off the heat and sprinkle with parsley.
4. Serve onto a plate and it's done.
